Even further, we're not at all built to digest refined carbohydrates like high-fructose corn syrup, refined white flour or refined sugar, and yet these ingredients are consumed in very large quantities at virtually every meal in America.
There's nothing wrong with our genes: it's that our modern food supply has given us far too many calories and far more food processing than our bodies evolved to handle. It's time for doctors and researchers to stop blaming our genes for diseases and start looking at the real source: our national food supply.
