Buckwheat, researchers have found, controls blood sugar. This isn't new -- holistic nutritionists have known this for a long time -- but it's new to see it in the mainstream news.
Buckwheat actually isn't a grain, by the way. It's technically a fruit, but most people consider it a grain anyway. You can find buckwheat products and mixes (like pancake mix) in your favorite health food store or natural grocer. Look for products made by Bob's Red Mill.
