About the Author Sylvia LeDoux inherited her lactose intolerance from her Native American ancestry. This intolerance jumpstarted her lifetime endeavor, including years of reading and research, to discover how the food we eat causes the diseases we get. Certified by the American Society of Clinical Pathologists as a Histology Technician, she has extensive experience in histology laboratory work at Texas Tech University, West Texas Hospital, and St. Mary Hospital in Lubbock, Texas. LeDoux also earned a BFA from Delta State University in Cleveland, MS. Also a renowned artist, LeDoux uses her talent to reinforce visually the information found inside of her book.
